How to Make Bread With Baking Soda

Ingredients:

1.An egg
2.Milk(Or water)
3.Honey(Or sugar)
4.Oil
5.One slice of lemon
6.Wheat Flour(Or white, as your wish)
7.Baking soda

Step 1

Preheat the oven (Usually costs around 15 minutes).

Step 2

Butter the pan (or a loaf pan). If you don't have butter, oil may work as well.(I haven't tried before though.)

Step 3

Cut a slice of lemon, and squeeze the juice into a bowl. (I use lemon juice because the acidity in it could react with baking soda, generating salt and carbon dioxide, which helps the bread rise even more.)

Step 4

In the same bowl, break one egg. Add honey, sugar(2 tbsp), oil(1 tbsp), milk (pour only little bit now so that you can adjust later). Stir until smooth.

Step 5

In another bowl, add flour and 1/2 to 1 tbsp baking soda. Shake the bowl. (I do not add salt because it would be produced by the previously mentioned chemical reaction.)

Step 6

Pour the liquid ingredients into the dry ones. Stir until you have a semi-liquid mixture as the picture shows.

Step 7

Once you get the texture right, pour the mixture into the pan immediately. (Once the baking soda meets moisture, the carbon dioxide generates right away. So, in order to make the bread rise nicely, it's good to move fast.)

Step 8

Quickly put the pan in the oven. Bake for around 30 minutes.

Step 9

Take out the pan. Let it cool down a bit.

Step 10

Cut the bread into pieces.

Step 11

Eat one and store the rest in the fridge.

  1. Yum! My problem with making bread is that it often comes out dry or crumbly. This looks so moist and firm, though! And the zest of lemon or lime would be delicious! Do you think I could add more than just the juice of one lemon? Like perhaps more to give it more citrus-y flavor?

    1. I think adding butter milk could make the bread more moist. Actually, I don't know you know or not, but you could try first adding lemon juice to the milk, and after several minutes, it could turn out into something similar to butter milk, which has the lemon flavor you want! Also, you could try adding lemon zest.

  2. This looks delicious! But knowing me... I'll still screw it up somehow. Have any advice for those of us just beginning to cook/bake on our own?

    1. It is normal case for me to screw up: adding too much salt, baking for too long, etc...But because most of the time I cooked for myself, I didn't mind eating whatever I cooked. And actually, for me, I learned most from mistakes.

  3. I've made soda bread like this before, and it is SO good! Soda bread is much easier to make than most kinds of yeast breads. Where did you get this recipe?

    1. Yes! I searched online about the quicker ways to make bread, and found a recipe with baking soda. I tried, and found that I wanted the bread to rise more, so I got the information (also from online) about mixing baking soda with lemon juice.

  5. I just learned recently that the big difference between baking soda and baking powder is that the former is basic and the latter is acidic. Interesting to see both forces at work in this recipe!

I should try this. I love making bread, but I've never made a soda bread before!
